One of the best things I do for myself every week is make these nursing muffins. Becoming a Mom has made it difficult to eat first thing. Every morning I wake up and take care of the dogs then I get Eliana and feed her. In order to make sure I eat right away, I make these nursing muffins and enjoy them while I’m nursing Eliana. Or if I get lucky and wake up before Eliana, I will eat these as a snack later in the day.
I want to note that nursing doesn’t have to be breastfeeding. Bottle feeding and feeding your baby in general is nursing and nurturing them. I think every Mom can utilize these. My husband also loves them and I know someone will ask–NO you do not have to be breastfeeding to eat these. Anyone can eat them, but I find them especially helpful during this season of my life.
Why I Love These For Nursing Moms:
-They are a great mix of protein, fat, and carb–supports healthy blood sugar and stable energy.
-They are also rich in micronutrients like minerals, especially calcium and potassium.
-You can eat them with one hand–enough said!
-They freeze really well.
-They are delicious. It’s important to enjoy your food. Every morning I look forward to a cup of coffee and these muffins.

I’ve been eating these everyday for over 4 months and can’t recommend them enough. They would also make a great gift for a new mom.
A couple recipe notes:
-Casein absorbs a lot of liquid. You may need to add milk to thin it out depending on the sweetener you use and how brown your bananas are. That’s why I say this typically makes 18 muffins for me but sometimes it’s a little less depending on the batter.
-If you use collagen instead of protein, the batter will be thinner.
